GABA tea is great for people who do not want to stay awake after drinking tea. It does not go through the chemical process of de-caffeination but uses a processing method that uses the natural chemistry of the tea plant. The harvested leaves of a tea plant has to undergo oxygen-free oxidation for the chemical reaction in the tea leaves to produce a large amount of GABA molecules. In GABA tea, the amount of caffeine remains the same in the tea leaf under processing; however, the effect of caffeine is negligible when compared to the effects of the GABA molecules.
ORIGIN
This single-estate tea comes from one of our farming friends in Ping Ling, Taiwan. They are a Buddhist charity that promotes organic farming in the region and sells their tea. Aunt Tong, a family member of our co-founder, volunteers at this farm to harvest and help make tea in her retirement.
CULTIVATION AND PROCESSING
This tea has been carefully handpicked and grown under organic conditions. It has been processed in a specialised device, which allows the tea produced to go under oxygen-free oxidation. This tea will allow you to sleep if you are afraid of the effects of caffeine.
TEA-BREWING GUIDE
We recommend the Gong Fu Cha brewing method for this tea as clay teapots enhance its flavour. You may brew this tea several times.
Gong Fu Cha Method: In a 200ml teapot, use 8-12g of tea. Brew with 85°C water (preferably filtered) for 3-5 mins.
Mug: Put 6g of tea in an infuser, brew with 85°C water (preferably filtered) for 2-3 mins.
Cold Brew: Use 12-15g of tea in a bottle with 600ml room temperature water (preferably filtered). Wait 5-7 hours.
