From the famed high mountain in Taiwan, this honey oolong is partially oxidised and slightly baked. The natural sweetness in the tea is more prevalent than in other teas because of the way this tea is grown. The jassid, a type of grasshopper feeds on its leaves, which, in turn, produces a settle, sweet flavour in the tea leaves. In addition, it goes through a baking process as a final stage which enhances a honey-like flavour. The tea has been described to develop subtle notes of sweet potato and sugared almonds. A smooth and creamy texture and sweet and rich flavour.
ORIGIN
Grown by Mr Huang from the most famous and highest mountains of Alishan in Taiwan. Mr Huang has a tea farm along the windy roads of the Alishan Mountain range and is still farming. We usually stop by when we visit Aunt Lin’s farm. His farm is at an elevation of about 2000 m.
CULTIVATION AND PROCESSING
This honey oolong is partially oxidised and slightly baked. It is grown without pesticides to bio-dynamically encourage the jassid (a type of grasshopper) to feed on its leaves, which helps impart a settle, sweet flavour into the tea.
