What Is Dong Ding Oolong?
Dong Ding, also written as Tung Ting and translated as "Frozen Summit" or "Icy Peak," is one of Taiwan's most celebrated and historically significant oolongs. Grown in the Lugu region of Nantou County, it is made from the Chin Shin cultivar - lightly oxidised and then roasted to varying degrees. The roasting level determines everything: from the fragrance and colour of the dry leaf to the texture and sweetness in the cup.
