What Is Doyoubo Brown Soybean Citrus Soy Sauce?
Doyoubo is a Taiwanese artisan producer celebrated for its traditionally fermented soy sauces, made using non-GMO heritage soybean varieties and time-honoured long-fermentation methods. This citrus soy sauce is their most decorated expression - built on two uniquely Taiwanese ingredients that are rarely found outside the island.
The Tea Bean
Taiwanese brown tea beans (cha dou) are a heritage non-GMO soybean variety grown in Meinong, Kaohsiung. Smaller and browner than conventional soybeans, they are exceptionally rich in flavour compounds. Crucially, the whole bean is fermented - not defatted - preserving the full oil content and unleashing the bean's complete flavour potential. The result is a soy sauce with a mellow, rounded sweetness and a clean, light body quite unlike standard soy sauces.
Citrus Depressa
Citrus depressa - also known as flat lemon or hirami lemon - is one of Taiwan's native citrus species, grown across Hualien, Taitung, Kaohsiung, and Pingtung. Every part of the fruit is edible, from peel to flesh, offering a uniquely fragrant citrus character that is tangy without bitterness. Its addition to this soy sauce introduces a delicate, aromatic lift that transforms the flavour profile entirely.
