ORIGIN
Grown from the mountains of Dong Ding (also known as Tung Ting) in Lugu region of Nantou County, Taiwan. Dong Ding tea is a classic Taiwanese tea. The name Dong Ding translates into “Frozen Summit" or "Icy Peak", and this tea is sometimes sold under these names.
CULTIVATION AND PROCESSING
This tea is made from the Chin Shin cultivar. This oolong is lightly oxidised and then roasted a different level. According to the roasting levels you will find from floral and citrus notes on the less oxidised teas to rich sweetness with hints of butterscotch, honey and biscuits on the heavily roasted oolongs.
TEA BREWING GUIDE
90-95°C, 3g per cup, 3-5 min (shorter for the lightly roasted, longer for the dark roasted). Several infusions.
