ORIGIN

The Lin Family Tea Farm is 2.7-acre tea estate located in Mingjian, a well-known tea village 500m above sea level in Nantou, Taiwan. The soil on our farm is dark red and iron-rich.

CULTIVATION AND PROCESSING

Uncle Lin is a fourth-generation tea maker who produces our teas using natural, traditional methods. Uncle Lin makes special teas exclusively for us in his small tea factory. Every year, he makes us a new version that has been processed with lots of care, making these some of our favourite batches of tea.

With the help of bees, there is a sweetness in these teas that comes from the pineapples and dragonfruit gardens, which grow alongside the tea garden on the Lin family farm.These tea have been picked during morning daylight hours.

TEA BREWING GUIDE

If you decide to try the teas in this flight side by side, we recommend starting with Chin Shin, then Four Seasons, and finishing with Ruby 18.

For Four Seasons and Chin Shin cultivars: 90-95°C, 3g per 200ml cup, 3-4 min on the first brew.

For the Ruby #18 cultivar: 95°C, 3g per 200ml cup, 3 min on the first brew.

These teas may be infused several times - you may use shorter brew times after the first brew.
