What Is Dong Ding Oolong?
Dong Ding, also written as Tung Ting and translated as "Frozen Summit" or "Icy Peak," is one of Taiwan's most celebrated oolongs. Grown in the Lugu region of Nantou County and made from the Chin Shin cultivar, it is lightly oxidised then roasted - with the roasting level determining everything from aroma to body to finish.
